Natural Wine

From Western Cape, South Africa comes sustainably farmed Cabernet Sauvignon that is fermented in concrete and aged in French oak for 9 months. The final blend is 60% oak matured and 40% from concrete.

Three friends came together to make this wine. They are fun, love to party and their wines are exactly that as well.

Organic, red fruit, aromatic, crisp, minerally, bright

Calm and crisp. Steel barrel aged. Clean enough for salad but herbaceous enough for chicken.

Glera, Pinot Bianco, Chardonnay, Tocai, Verduzzo.

Prosecco < Italy

Co-fermented, macerated on the skins for a few days, and then aged on the lees in bottle for 10 months. Unfined, unfiltered, minimal SO2. Natural. Fun and fizzy. Golden notes of tart melon and stone fruit. Crisp, dry and mineral driven. A beautiful skin contact pet-nat.

Filipa Pato is a winegrower in Bairrada. A graduate of the University of Coimbra as a chemical engineer, she refined her skills working harvests in Bordeaux, Mendoza, Margaret River, and right at home in Bairrada with her father, Luis Pato, the Baga Rebel. (In 2020 Filipa was elected Winemaker of the Year in Portugal by the Revista de Vinhos, the first Portugese woman to earn the title in 30 years.)

Williams Wouters is a chef sommelier/ restaurateur. Hailing from a restarateuring family from Antwerp, Belgium.

Together, they are Filipa Pato & William Wouters. Their philosophy is: to create authentic wines without makeup, wines that express the true nature of the vineyards from which they come. They focus on indigenous grapes only.

Gosh, what not to say? Organic. No sulfur added. 250 year old vines. Vinified in open top fermenters and then aged for a few months in old barrels. Volcanic.
